  6. Air Fry the First Batch: Cook for 10-12 minutes. Halfway through the cooking time (around 5-6 minutes), open the air fryer, shake the basket, or use tongs to flip the chicken pieces and stir the vegetables. This promotes even cooking and browning.
  7. Check for Doneness: Once cooked, remove the chicken and vegetables from the air fryer. Use a digital meat thermometer to check the thickest portion of a chicken piece; it should reach a minimum internal temperature of 165ºF (74ºC) for food safety.
  8. Repeat for Second Batch: Transfer the cooked chicken and vegetables to a clean bowl and repeat with the remaining chicken and vegetable mixture.

Oven Instructions: No air fryer? No problem! Preheat your oven to broil, with a rack in the upper third. Line a broiler-safe sheet pan with parchment paper. Spread the seasoned vegetables and chicken in a single layer. Broil for 10-11 minutes, turning the chicken and stirring the vegetables halfway through, until the chicken reaches an internal temperature of 165ºF (74ºC) and vegetables are tender-crisp.
