Mastering the Ingredients for Your Perfect Hwachae
Crafting this viral, perfectly sweet, and visually stunning Korean watermelon punch starts with selecting the right components. Each ingredient plays a crucial role in achieving that signature refreshing taste.

- Watermelon (The Essential Base): For a single batch, you’ll need about 3 cups of cubed watermelon, typically half of a mini or baby watermelon. Watermelon is the star of this punch, lending its natural sweetness and high water content for ultimate hydration. While cubing is easiest for serving and eating, feel free to use a melon baller for a more elegant presentation.
- Mixed Berries (Burst of Flavor and Color): While Hwachae is traditionally watermelon-focused, a mix of juicy berries elevates the flavor profile and adds stunning visual appeal. We recommend a vibrant combination of sliced strawberries, raspberries, blueberries, and blackberries. Choose ripe, firm berries for the best taste and texture.
- Dragon Fruit (Optional, for Exotic Flair): If you can find fresh dragon fruit, definitely add it! Cubed dragon fruit introduces a beautiful pop of color and a subtly sweet, refreshing flavor that makes your Hwachae even more special. Its unique speckled flesh is incredibly eye-catching.
- Strawberry Milk (Creamy Sweetness): This adds a delightful creaminess and a hint of strawberry flavor that pairs wonderfully with the fresh fruit. The quality of strawberry milk can vary, so use a brand you genuinely enjoy. For an extra touch of homemade goodness, consider making your own strawberry milk for a fresher, more customizable taste.
- Lemon-Lime Soda (The Fizzy Element): A carbonated beverage like Sprite, 7-Up, or a similar lemon-lime soda provides the signature bubbly kick. For a more authentic touch, seek out Chilseong Cider at an Asian grocery store – it’s the traditional choice in Korean fruit punch and offers a crisp, clean finish.
- Coconut Jelly (Nata de Coco – Chewy Delight): Nata de Coco, a chewy coconut jelly, adds a unique texture that’s highly addictive. It often comes in packs with various fruit flavors. We suggest using one of each flavor for a layered taste experience. If coconut jelly is hard to find, canned fruit cocktail or even homemade fruit jelly can serve as excellent alternatives.
- Sweetened Condensed Milk (Enhancing Sweetness): A small amount of sweetened condensed milk beautifully complements the natural sweetness of the fruits and adds a luxurious richness to the liquid base. Just ⅓ cup is all you need to achieve that perfect balance.
How to Craft Your Refreshing Hwachae: A Simple Guide
Also known as Korean fruit bowl or Korean watermelon punch, Hwachae is a remarkably easy-to-make dessert and beverage. Follow these straightforward steps to create a delightful treat that’s perfect for any summer occasion.

- Prepare Your Fruit: Start by thoroughly washing all your fruits. Pat them dry with a clean towel. Cube the watermelon and dragon fruit (if using), aiming for bite-sized pieces about ½-¾ inch. Slice the strawberries, but leave smaller berries like raspberries, blueberries, and blackberries whole. The uniform size makes for easier eating and a beautiful presentation.
- Combine the Fruits: Place the 3 cups of cubed watermelon into a very large serving bowl or punch bowl. Add 1 cup of sliced strawberries, ¾ cup of raspberries, ¾ cup of blueberries, and ½ cup of blackberries. If using, add the 1 cubed (and peeled) dragon fruit. Gently stir all the fruits together to ensure an even distribution.
- Introduce the Coconut Jelly: Cube the 3 containers of coconut jelly (or your chosen alternative) into similarly sized pieces as your fruit. Add these to the bowl and stir gently once more to integrate them with the fruit mixture.
- Sweeten with Condensed Milk: Drizzle ⅓ cup of sweetened condensed milk over the fruit and jelly. Its rich sweetness will slowly seep into the fruits.
- Add Strawberry Milk: Pour in approximately 1 ½ cups of strawberry milk (or plain milk). Stir very gently, just enough to help the sweetened condensed milk dissolve and combine with the milk and fruits. Avoid vigorous stirring to prevent bruising the delicate berries.
- Pour in the Soda: Finally, slowly add 1 ½ cups of lemon-lime soda (like Sprite or 7-Up) or Korean Chilseong Cider. Pouring slowly helps to minimize foam and preserve the carbonation. Give it one last gentle stir.
Serve Chilled and Enjoy!

Your Hwachae is now ready! For the best experience, add 8 regular-sized ice cubes (about 1 ½-2 cups) right before serving to keep it perfectly chilled. Ladle generous portions into individual bowls and relish the refreshing sweetness.
Maximizing Freshness: Storing Leftover Hwachae and Making Ahead
One of the fantastic benefits of Hwachae is its excellent shelf life, allowing you to enjoy this delightful Korean watermelon punch for days. I’ve personally made this recipe countless times, and it consistently stores well in the refrigerator for up to 3 days. While the melting ice might slightly dilute the punch over time, the watermelon typically remains crisp, and the other fruits retain their shape and delicious flavor. Most importantly, it still tastes incredibly refreshing!
However, for special occasions or when serving guests, preparing it fresh right before serving will ensure the best possible fizziness and vibrant appearance.
Can I make Hwachae ahead of time?
Absolutely! To enjoy the freshest taste and fizziness, it’s best to prepare Hwachae in stages and assemble it just before serving. Here’s how to do it:
- Prepare All Fruit: Wash, peel, and cube all your desired fruits. Place them in your serving bowl or a large airtight container. Cover tightly with plastic wrap and store in the refrigerator. This step can be done up to 24 hours in advance.
- Chill Liquids: Make sure all your liquid ingredients – the strawberry milk (or regular milk), lemon-lime soda, sweetened condensed milk, and even the coconut jelly – are thoroughly chilled in the refrigerator. Cold ingredients are key to a truly refreshing punch.
- Assemble Last Minute: Approximately 10-20 minutes before you plan to serve, add the chilled sweetened condensed milk, strawberry milk, coconut jelly, and finally the lemon-lime soda to your prepared fruit bowl.
- Stir, Ice, and Serve: Give everything a gentle stir to combine. Add ice cubes right before bringing it to the table to prevent them from melting too quickly and diluting the punch. Serve immediately and enjoy the fresh, fizzy delight!
Top tip for fizz lovers: The carbonation from the soda doesn’t last indefinitely. If you particularly love the fizzy kick of Hwachae, always add the soda just before serving to maximize its effervescence.

Unleash Your Creativity: Hwachae Substitutions and Variations
Part of the beauty of Hwachae is its adaptability. Don’t be afraid to experiment with different ingredients to suit your taste, dietary needs, or what you have on hand. Here are some ideas to inspire your culinary creativity:
- Explore Different Fruits: While watermelon and berries are classic, feel free to use your favorite seasonal fruits. Grapes, mango, cantaloupe, honeydew melon, peaches, or even sliced bananas can all work beautifully. Avoid highly acidic fruits like kiwi or pineapple, as they can react with milk and create a bitter taste.
- Alternatives to Coconut Jelly: If you can’t find Nata de Coco, don’t worry! You can completely omit it, use canned fruit cocktail (including its light syrup for extra flavor), or even make your own homemade jelly. For a unique twist, try making a simple coconut milk jelly to enhance the tropical notes.
- Dairy-Free Adaptations: For a dairy-free Hwachae, swap the strawberry milk for your favorite sweetened non-dairy milk, such as almond milk, oat milk, or for a rich, creamy texture, canned coconut milk. Replace the sweetened condensed milk with a dairy-free alternative like sweetened condensed coconut milk (often found in the natural foods section) or simply use a bit more sugar or maple syrup to taste.
Easy Swaps for Specific Needs
- Sugar-Free Options: To reduce sugar content, opt for a sugar-free lemon-lime soda or simply use club soda or sparkling water for effervescence without added sweetness. You can also adjust the amount of sweetened condensed milk.
- Boost Protein Content: For a more substantial snack or post-workout treat, swap the strawberry milk for your favorite vanilla or strawberry-flavored pre-mixed protein shake (brands like Fairlife vanilla work wonderfully).
- Spice It Up: For an adventurous kick, add a tiny pinch of chili flakes or a very thin slice of jalapeño to infuse a subtle heat that contrasts surprisingly well with the sweet fruit.

Expert Tips for Crafting the Best Hwachae
Achieving the perfect Hwachae is simple with a few insider tricks. Follow these expert tips for an unforgettable Korean watermelon punch:
- Pre-Chill All Ingredients: This is perhaps the most crucial tip! Ensure your soda, milk, sweetened condensed milk, and especially your fruits are thoroughly chilled before assembly. Starting with cold ingredients helps maintain a low temperature, significantly slowing down the melting of ice and keeping your Hwachae perfectly refreshing for longer.
- Aim for Bite-Sized Pieces: When cubing watermelon, dragon fruit, or any other large fruit, aim for uniform, bite-sized pieces (around ½ to ¾ inch on all sides). This ensures every spoonful is easy to eat and contains a delightful mix of flavors and textures.
- Embrace Fruit Experimentation: While traditional watermelon punch often uses only watermelon, don’t shy away from adding other fruits to enhance flavor and visual appeal. Just remember the caveat about kiwi and pineapple, which can curdle milk and create an unpleasant bitter taste.
- Garnish for Extra Flair: The natural beauty of fresh fruits in Hwachae is often enough. However, if you want to elevate your presentation, consider garnishing with fresh mint leaves, edible flowers, or even small watermelon pieces cut into fun shapes with cookie cutters.
- Gentle Stirring is Key: When combining ingredients, especially after adding the soda, stir gently. This prevents bruising the delicate berries and helps maintain the carbonation, ensuring a fizzy and visually appealing punch.
- Adjust Sweetness to Taste: The amount of sweetened condensed milk can be adjusted based on your preference and the natural sweetness of your fruits. Taste as you go and add more if desired.

Frequently Asked Questions About Hwachae
- What is Hwachae?

- Is Hwachae healthy?
- Our Hwachae recipe, packed with fresh fruits, provides essential vitamins, minerals, and fiber. While it contains some added sugar from condensed milk and soda, it can be made healthier by opting for sugar-free soda and reducing the amount of condensed milk to taste.

- What if I don’t have coconut jelly (Nata de Coco)?
- No problem! You can omit it entirely, or substitute with canned fruit cocktail, canned peaches, or pears cut into small cubes. Homemade fruit jelly is also a great alternative if you have the time.

Ingredients
- 3 cups cubed watermelon (about ½-¾”)
- 1 dragonfruit cubed (about ½-¾”) (optional)
- 1 cup sliced strawberries
- ¾ cup raspberries
- ¾ cup blueberries
- ½ cup blackberries (or more blueberries and/or raspberries)
- 1 ½ cups cubed coconut jelly (about 3 containers; one of each flavor, or canned fruit**)
- ⅓ cup sweetened condensed milk
- 1 ½ cups Sprite or lemon-lime soda*
- 1 ½ cups strawberry milk (about 1 bottle, or regular milk)
- 8 ice cubes (about 1 ½-2 cups) (optional)
Instructions
- Prepare the fruit. Wash all of the fruit, and pat dry with a clean towel. Cube (and remove the peel) from the watermelon and dragon fruit (if using). Slice the strawberries, but leave the other berries whole.
- Add to a bowl. Transfer the prepared fruit to a very large bowl (or punch bowl). Add in the coconut jelly and stir gently to evenly distribute all of the ingredients.
- Add the liquids. Drizzle in the sweetened condensed milk, then pour in the strawberry milk and stir gently to help the sweetened condensed milk dissolve.
- Pour in the soda. Finally, slowly pour in the soda and stir gently. It will foam up slightly, so just be sure your bowl is large enough to handle the rising liquid level.
- Finish with ice. If desired, add ice to the bowl before serving. I recommend 8 regular-sized cubes (about 1 ½-2 cups). Serve immediately by ladling into bowls, or chill until needed.

Notes
*Lemon-lime soda: Traditional Hwachae uses a Korean cider known as Chilseong cider. Lemon-lime sodas like Sprite or 7-Up are a great swap and have a similar flavor. Ginger ale may be used, but it has a more distinct taste and isn’t highly recommended.
**What can I use instead of coconut jelly? Coconut jelly is easy to find at Asian grocers, or in the “International” aisles of your local supermarket. They often come in 3 flavors and are sold in packs of 6. If you can’t find it (or prefer not to use it), you can leave it out completely, substitute it for homemade jelly, OR canned fruit (pears, grapes, fruit cocktail, etc).
Dairy-free: Swap the sweetened condensed milk for sweetened condensed coconut milk, and use your favorite sweetened non-dairy milk in place of the strawberry milk.
